Hemp Seed/Pecan Cookies
These cookies are a staple in our home! We always make them gluten free, but you can do either. We freeze them in between sheets of wax paper in either a plastic container or a Ziploc (if we use a Ziploc, we re-use the bag several times.)
Ingredients:

1 1/2 cups regular or gluten-free (GF) flour

1 1/2 cups ground oats

1 tsp baking soda
-
2 tsp baking powder
-
1 tsp salt
-
2 3-oz bars 70-85% dark chocolate, chopped

Avoid using chocolate chips, since they are so high in sugar

1 1/2 cups hemp seeds
-
1/2 cup crushed pecans
-
1/2 cup almond milk
-
4 tsp (=1 tbsp + 1 tsp) pure vanilla extract

1/2 cup avocado oil
-
1 1/2 cups sugar
Directions:

Preheat oven to 350F.

Line 3 baking sheets with parchment paper.

Dry mixture: Mix flour, baking soda, baking powder, and salt with a whisk. Stir in the chopped chocolate, hemp seeds, and pecans with a spoon. Set aside.

Wet mixture: In a large bowl, add milk, vanilla, avocado oil, and sugar. Mix well.

Add the dry mixture to the wet mixture on low speed until the mixture forms a dough.

Using a spoon, scoop up about 1 1/2 tbsp of batter and form into a ball. Place on cookie sheet and flatten until it is about 1/4" thick. Repeat, placing cookies about 2" apart if using regular flour and 1" apart if using GF flour.

Bake for 14-17 minutes, or until slightly brown around the edges. When you smell the pecans, that is usually an indicator that the cookies are almost done.
Fruit Ice Cream
You will need a fruit soft-serve maker—we think it's totally worth the investment. Click here for one example.
We usually make at least 2 kinds. Bananas are added to most since they make the dessert sweeter. On one occasion, we made strawberry banana fruit ice cream and orange fruit ice cream and put a little bit of each into each person's ramekin. It's healthy and super pretty!

Bananas, frozen

Orange slices (skins removed), frozen

Strawberries and bananas, frozen

Cherries, frozen
-
Blueberries and bananas, frozen

Or whatever fruit you like!

Directions:
Follow the instructions on the fruit soft-serve maker. It should be very easy to use. Essentially, you will leave the frozen fruit out for about 15 minutes until it softens a little, and then run it through the machine. It's fun and tastes so good!
Power Bites
This is also a daily staple for our family. Sue has a couple with her smoothie first thing in the morning, and Sydney eats several right after a soccer game. You will need a food processor to make these. You can also change the nuts and/or the nut butter suggested below. We've included links to some of the ingredients that we use at home.
Ingredients:

2 cups walnuts

1 cup pecans
-
3 cups Medjool or Deglor dates
-
1/2 cup almond butter
-
3/4 cup cacao powder
-
1/2 tsp salt
-
2 tsp maqui powder (optional)
Directions:

Add nuts to food processor and chop well. Make sure to do this step before adding remaining ingredients so that the blades don't get stuck.

Add remaining ingredients and turn on food processor until well-mixed.

Roll into balls.

Refrigerate in an airtight container or silicone bag.
